No-carb Eggplant Bruschetta


A quick and easy appetizer for your dinner table, it's carb-free! 


1 Eggplant, sliced

2 Tomatoes, diced

1/2 tsp garlic, finely diced

1 tsp oregano 

Parmesan Cheese, grated 


1. Slice eggplant into 1-inch thick rounds, toss in olive oil, salt and pepper

2. Place in baking pan and bake for 10 minutes 

3. Mix tomato, garlic, and oregano 

4. Top each eggplant round with 1 Tbsp tomato mix, and sprinkle with parmesan cheese
