A sweet treat: Bread Pudding


Make your own bread pudding or Pain Perdu using this recipe, which adds up to 150 calories per serving! 


2 eggs: separated + 2 egg whites

1 ½ cup simmed milk 

3 Tbsp honey, divided 

1 Tbsp vanilla extract 

1 Tbsp canola oil 

1 tsp ground cinnamon 

½ tsp nutmeg

3 cups whole grain bread/toast, cut into cube

1 /4 cup chopped walnuts


1. Mix the 4 egg whites  with an electric mixer 
2. Mix the 2 egg yolks in a separate bowl. Add milk, honey, vanilla, oil, and cinnamon to egg yolk and blend. Add the bread and walnuts, make sure the bread absorbs the liquid
3. Pour into the egg white mixture and mix by folding. 
4. Bake for 35 minutes in a preheated oven or until center comes out clean with a knife. Sprinkle with nutmeg

*Tip: If the top is browning to fast, cover with aluminum foil
