Carrot Oat Cookies

We are wishing you a happy and healthy Easter! Try out these carrot oat cookies for your Sunday feast!

Ingredients:

¾ cup carrots, shredded

1 large egg

1 cup oats

¾ cup flour (whole wheat is preferable)

1 ½ tsp baking powder

1 ½ tsp cinnamon

1 tsp vanilla extract

2 tsp coconut oil or butter

1/3 cup maple syrup

 

Procedure

1. Mix coconut oil, egg, maple syrup and vanilla together

2. Add the rest of the dry ingredients. Stir in the carrots at the end

3. Bake for 15 minutes

 

Serves: 15 // Calories per serving: 80
